I had the same issue when I build my new rig.
Graphic card : Rx 590
It seems like a common issue with that series for AMD.
In stress test it didn't crash even after 30 mins at average 75° Celsius. But in game it crashed every 15 mins even at 65° Celsius.
What worked for me was, capping the fps to 60 and turning off few of the graphic effects.
I'm still doing limit testing as to what all graphic options I can keep on and what's the max fps I can maintain.

it's a matter of temprature (I have a coolpad under my laptop and if I unplug it during game, after 1 hour it will restart)

I have to undervolt and assign a -30% power limit to the gpu to avoid restarts few minutes into the game. Plus I've got VSYNC enabled. This restarting problem is only limited to games.
Specs: Ryzen 5 2600
GPU: RX 580 4 gb
Motherboard: Asus Tuf B450
Ram: 16 gb 2666 mhz
PSU: 600 watt.
